I have a confession….I love taco Tuesday. Well I take that back, in my house we like #tacotuesday #mexicanmonday #fajitafriday #salsasaturday (is that a thing?). Okay, you get the point. We like our Mexican food in Casa del Siler. I almost always have either some taco meat or fajita meat cooked up to have on hand for lunches. 

Sweet Potato Taco Boats Meal Prep

Today my taco meat got a new twist and I used some baked sweet potato that I had meal prepped on Sunday to get my base. 



I absolutely love mixing sweet and savory flavors together. Usually for my Mexican dishes it is by adding in some corn. However, I must say that the Sweet Potato Taco Boat is definitely a close second to making a taco bowl using corn with all the fixings! Plus it is #mealprep friendly so can’t really complain there!


Sweet Potato Taco Boats

Cook time 1 hour, 15 minutes
Total time 1 hour, 30 minutes

A twist on a traditional Mexican taco. Up the nutrition and stay full with these sweet potato taco boats!


  • 1lb 90/10 ground beef (or lean ground turkey)
  • 2 Medium Sweet Potatoes
  • 1 packet Taco Seasoning (Or homemade)
  • salsa (for topping)
  • cheese (for topping)
  • sour cream (for topping)


Step 1
Bake sweet potatoes in 400 degree oven for 45-60 minutes or until soft
Step 2
While sweet potatoes are baking, brown meat and add seasoning as directed on package.
Step 3
Cut sweet potatoes in half and top with meat evenly between halves.
Step 4
Add toppings as desired.
